Corn Chex®Rice Chex®Wheat Chex®
Ingredients
8cups Corn Chex®, Rice Chex® or Wheat Chex® cereal (or combination)
2cups almonds
1/3cup butter or margarine
1teaspoon seasoned salt
1teaspoon ground cumin
1teaspoon ground coriander
1/2teaspoon ground cinnamon
1teaspoon dried mint leaves, if desired
1cup chopped dried fruits, currants or raisins
1/4cup finely chopped crystallized ginger
3tablespoons honey, if desired

Purchasing
Look for crystallized ginger in the produce area or with the spices. You can substitute 1 tablespoon ground ginger with the other spices if you prefer.
Preparation Directions
1.In large microwavable bowl, mix cereals and almonds; set aside.
2.In small microwavable bowl, microwave butter on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.
3.Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes, until mixture just begins to brown. Stir in dried fruits and ginger. Drizzle with honey. Spread on waxed paper to cool. Store in airtight container.
Oven Directions: Heat oven to 250°F. In large bowl, mix cereals and almonds; set aside. In ungreased large roasting pan, melt butter in oven. Stir in seasonings. Gradually stir in cereal mixture until evenly coated. Bake 1 hour, stirring every 15 minutes. Stir in dried fruits and ginger. Drizzle with honey. Cool completely, about 15 minutes. Store in airtight container.
